BREADED CHICKEN CULETS WITH MUSHROOMS

 

2 LBS. Chicken breast cutlets, pounded thin

2 eggs, beaten

salt and pepper

grated parmesan cheese

bread crumbs

1 LB. mushrooms, sliced

4T. olive oil

1 chopped onion

one cup white wine

 

Season eggs and chicken with salt and pepper.  Dip chicken in eggs, then bread crumbs.  Cook in oil and few minutes on each side. Place in greased 13x9 inch baking pan.

Simmer oil, onion, mushrooms and wine for ten minutes.

Pour hot sauce over chicken and bake 350 degrees 15 minutes.  Sprinkle with parmesan cheese.
