Not exactly an Italian recipe, but whenever we went to Aunt Phil’s house for dinner, these creamy potatoes were sure to be on the table. There is nothing like them.
Aunt Phil’s Potatoes
Felicia Lappell1 quart water
1 1/2t. salt
6 T. butter
1 1/3 cups milk
1 quart potato flakes
2 eggs
1/2 pound shredded mozzarella
2 t. butter
Heat water with milk, salt and 6 T. butter until boiling. remove from heat and gently stir in potato flakes. Let cook for 5 minutes. Mix in one egg at a time. Add some of the cheese and beat well. Pour some of the mixture into a baking dish and layer with mozzarella. Add the rest of the potatoes and top with the 2 T butter.
Bake 350 degrees for 25 minutes.
