WITH TURMERIC-CUMIN BUTTER

Next Side Dish recipe

 

    2 pounds small potatoes (new or red potatoes are best) 1 inch dia.

Boil potatoes in their skins until they are just tender, not mushy or split open. Drain and leave to cool.

    2 tablespoons peanut or corn oil
    1 teaspoon whole cumin seed
    1/4 teaspoon ground turmeric
    2 tablespoons unsalted butter, cut into small pieces
    1 teaspoon salt
    Freshly ground black pepper
    1/4 teaspoon cayenne pepper, optional

Heat the oil in a large frying pan over a medium-high heat. When hot, put in the whole cumin seed. Ten seconds later, put in the ground turmeric. Stir once quickly and put in the butter. Stir once or twice. The butter should melt. Now put in the potatoes, salt, black pepper and cayenne. Stir the potatoes around for 1 to 2 minutes until well-coated with the butter and heated through. Serve hot.

Makes 5 to 6 servings.
