Tortilla Bake

Preheat oven to 350' F.

    5 6-inch flour tortillas or corn tortillas
    3/4 lb sweet Italian sausage
    1 large white onion, finely chopped
    2/3 cup mild or medium salsa
    1 4-oz. can green Chiles
    1 1/2 cups medium sharp cheddar cheese, shredded

Spray a 9 inch pie plate with cooking spray. Line with the tortillas. Brown the sausage, and drain. Set aside. Saute the onions until they begin to caramelize. Combine all ingredients above and spread over the tortillas.

    1 egg plus 3 egg whites
    1/2 cup non-fat skim milk
    3 Tbsp. flour
    1/2 tsp. baking powder
    1/2 tsp. ground cumin, or more to taste
    1/4 tsp. chili powder, or more to taste

Combine the ingredients above, whisking well, and pour over the meat mixture. Bake for 40-45 minutes until set in the middle.

    Tomato slices
    Cilantro sprigs, plain yogurt or sour cream

Remove from oven and top with tomato slices and cilantro. Serve with dollops of yogurt, sour cream or a mixture of both.
