SESAME-CRUSTED HALIBUT

    1 cup sesame seeds
    1/4 cup all-purpose flour
    1 egg, beaten
    Salt and white pepper
    2 6-ounce halibut fillets
    1 tablespoon olive oil
    Sage sprigs and lemon wedges (for garnish)
     

Preheat the oven to 400 degrees. Mix together the sesame seeds and flour. Season with salt and pepper. Dredge the fillets in the egg, flour mixture then sesame seeds to coat them. Repeat until mixture is used up. In a medium, oven-proof, nonstick saute pan on high heat, heat the olive oil and saute the halibut, browning both sides, about 2 minutes per side. Bake 15 minutes, or until the flesh feels firm to the touch.
