BAKED APPLE WITH LEEKS AND SAUSAGE

Baked Apple with Leeks and Sausage

    1/4 lb sweet Italian sausage
    2 leeks, white and light green parts only, finely chopped
    1/2 tsp ground sage
    1/4 tsp salt
    1/4 tsp fresh ground pepper
    1/2 cup bread crumbs
    2 Tbsp butter

Melt butter in a saute pan over medium heat. Add sausage and cook until no longer pink. Break up finely with a fork. Drain and set aside. Pour off excess grease, leaving a tablespoon. Add leeks and saute until soft. Combine sausage, leeks, sage, salt and pepper, and bread crumbs, and set aside.

    4 large Granny Smith apples
    4 patties of butter
    4 Tbsp wine or apple juice

Hollow out the apples, being certain not to cut through the sides or bottom. Stuff with the sausage mixture. Top with 1 pattie and 1 Tbsp wine or juice. Microwave at 50% power for 5 minutes, or until the apple is tender. Rotate for even cooking.
