ANGEL HAIR PASTA WITH BACON, PEAS
 AND RED PEPPERS

    2 Tbsp olive oil
    1 small onion, finely diced
    6 bacon slices, lean part only
    3 garlic cloves, minced
    1 7 oz jar roasted red peppers, drained and sliced
    1 cup frozen peas, thawed
    1/2 cup whipping cream
    1 Tbsp Knorr liquid concentrated chicken broth
    1/2 cup grated parmesan
    Salt to taste
    Pepper to taste
    12 oz angle hair pasta, broken into thirds
    Additional 1/2 cup grated parmesan cheese

Start cooking water boiling for pasta. Heat oil in heavy large skillet over medium high heat. Add onion, bacon and garlic and cook until onion is tender and bacon is cooked, stirring occasionally, about 8 minutes. Stir in peppers, peas, whipping cream, concentrated broth and parmesan cheese and simmer while pasta cooks, about 8 minutes. Season to taste with salt and pepper. Drain the cooked pasta, and add to the sauce. Toss well. Garnish with additional parmesan. Serve immediately.
