BASIC
Standard Grey Std Gray

It has a charcoal-like top coat and whiter underbody, almost white.
It has black eyes with dark ears and paws.
Black Velvet Black Velvet

It has a black top coat with lighter underbody.  The black is very intense with grey on its sides. 
It has black eyes, dark ears and paws.
It has a fatal factor and should not be mated with another black velvet.
Beige Heter Beige

Homo Beige

Heterozygous beige has color ranging from cream to sand-color shades.
It has a whiter belly, pink/red (ruby) eyes, pink ears and paws.

Homozygous beige or blonde is much lighter like champagne and has a pink tint. 
The eyes are of a lighter shade than the heterogeneous beige.

Ebony Heter Ebony

Homo Ebony

This chinchilla is totally black from head to toe.
The eyes, ears, and paws are all black.
Heterozygous ebony tends to have some white on its side.

On the other hand, homozygous ebony has fur resembling a nice black velvet cloth
White Wilson White

There are various types of white because of selective breeding by breeders.

Wilson white has white fur with dark eyes and ears.  Commonly known as Mosaic. 

Pink white is white with some beige coloration, pink or red eyes and pink ears and paws.

Silver has white body with the tips of the hair tending towards black.  It is almost like a white chinchilla coated with some black ashes.

Black/White Cross is another variation of black/white piebald.
Brown Velvet & Tan Brown Velvet

Brown velvet has a brown top coat and a light or white underbody.
It has dark/red eyes with pink ears and paws. 

Tan (or just brown) is uniformly brown all over.
It has dark eyes with pink ears and brownish-pink paws
Afro-Violet Violet

It has a soft grey coat with a white undercoat.
It has dark eyes with grey ears and pink paws.
This is the newest addition to the mutant colors.  Some claims that afro-violet chinchillas are more calm, chew less and smaller in size.  I am not sure how true this is. 
Sapphire Sapphire

It is bright light blue in color, with no gray at all.  It is an extremely rare color. 
Royal Violet or Royal Sapphire refers to a cross between sapphire & black velvet.  The terms are used mainly by English breeders.
