"From Our House To Yours"


Angel Biscuits

These are more like rolls than biscuits.

Ingredients

5 C sifted flour

1/3 C sugar

1 tsp soda

2 tsp salt

3 tsp baking powder

1 pkg dry yeast

1/4 C warm water

1-1/2 C buttermilk

1 C shortening

Sift dry ingredients together, cut in shortening. Dissolve yeast in warm water, combine buttermilk and then add this to the dry ingredients. Stir well, Knead. Add more flour if necessary. Roll out on a floured board to about 1/2 in. thick. Cut with biscuit cutter. Spread tops with melted butter. Bake at 450 until golden brown. Note: Cut-out biscuits may be frozen on a cookie sheet unti hard and then placed in a plastic bag and kept in freezer until needed.

Cheese Garlic Biscuits

Ingredients

These are like Red Lobster's

2 C biscuit baking mix

2/3 C milk

1/2 C shredded cheddar cheese

1/4 C melted margarine or butter

1/4 tsp garlic powder

Preheat oven to 450� Stir together baking mix, milk and cheese to get a soft dough. Beat vigorously with a wooden spoon about 30 seconds. Drop dough by spoonfuls onto ungreased baking sheet. Bake 8 to 10 minutes or until golden brown. Meanwhile, stir together melted butter and garlic powder. Brush over biscuits as soon as they are done. Serve warm. Makes 10 to 12 biscuits

Rocky Mountain Apple Bread

Ingredients

4 eggs

2 C sugar

1/2 C buttermilk

1/2 C mayonnaise

1 tsp vanilla

3-1/2 C flour

1/4 tsp salt

1 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

2 medium tart green apples

1 C raisins

1 C chopped walnuts

Beat egg, sugar, buttermilk, mayo & vanilla. Mix dry ingredients and add to egg mixture, until just combined. Chop apples, add to batter with raisins and nuts. Put into 2 greased & floured 5 x 9" loaf pans. Bake 375� about 1 hour 10 minutes or til pick comes out clean.

Mexican Corn Bread

Ingredients

1 C yellow corn meal

1 C flour

1 Tbl baking powder

1 tsp salt

1 egg

1 C milk

1 (8-3/4 oz) can creamed corn

1/4 C chopped onion

2 Tbl chopped green chilies

2 Tbl chopped pimento

1/4 C butter

1/2 C grated cheddar cheese

Combine dry ingredients. Beat egg & milk together add corn. Saute onions, chilies & pimento in butter in skillet, till onion is tender. Mix all ingredients together, stir till just mixed. Pour into well greased 8" square pan. Bake at 350� 35-40 minutes

Cody's Fresh Squash Bread

Ingredients

1 1/2 C flour

2 tsp cinnamon

1 tsp baking soda

1 1/2 C zuchini or summer squash shredded

2 eggs, well beaten

3/4 C sigar

1/2 C oil

2 tsp vanilla extract

Preheat oven to 350 degrees. Mix flour, cinnamon, and baking soda thoroughly. Combine well beaten eggs, sugar, oil and vanilla. Beat about 3 minutes. Stir in squash. Add dry ingredients. Mix only until dry ingredients are moistened. Pour into a well-greased loaf pan. Bake 40 minutes or until toothpick inserted in the center of loaf comes out clean.

Banana Sour Cream Quick Bread

Ingredients

2/3 C butter or margarine

1-1/2 C sugar

2 eggs

1-1/2 C mashed bananas (about 3)

2-3/4 C flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/2 C sour cream

1 C chopped nuts, optional

Cream butter and sugar until light and fluffy. Add eggs and bananas and beat until well blended. Sift together flour, baking powder, baking soda, and salt. Add alternately with sour cream to banana mixture, stirring just to blend Stir in nuts if used. Pour into greased and floured loaf pan (can spray with Pam) Bake at 350� for 90 minutes* or until tooth- pick comes out clean. Let stand in pan for 10-15 minutes


Country Morning Peach Bread

Ingredients

1 can (29-oz.) cling peach slices

3 C flour

1 Tbl baking powder

3/4 C sugar

1/4 tsp salt

1/2 tsp allspice

1/4 C melted butter

1 egg

1/4 C sour cream

1/4 C finely chopped nuts

1/4 C brown sugar

Preheat oven to 350� Drain peaches; save 5 peaches for topping and puree remainder. Into deep bowl mix flour, baking powder, sugar, salt and allspice. Mix together pureed peaches, butter, egg and sour cream Pour peach mixture into dry ingredients, mixing just until moistened. Pour into greased loaf pan Mix nuts and brown sugar together; sprinkle over top of dough. Arrange peach slices on top of sugar mixture. Bake at 350� for 50 minutes or until tests done


Orange Almond Scones

Ingredients

I love scones with a cup of herbal tea. This is one of my favorites.

1/2 C Orange juice

1/4 C Buttermilk

1 Large Egg

1/2 tsp Almond extract

3 C Unbleached flour

4 tsp Baking powder

1/2 tsp Baking soda

1/4 tsp Salt

8 Tbl Cold butter

1/2 C Sugar

1/2 to 3/4 C Almonds, finely chopped

1 Tbl Orange zest

Grate orange peel and set aside. Squeeze orange juice.In a small bowl, beat juice, buttermilk, egg and extract until smooth. In a large bowl, combine flour, baking powder, baking soda and salt until well mixed. Cut in butter with a pastry blender until mixture looks like fine sized peas. Add sugar, almonds and orange zest and toss to combine evenly. Using a fork, stir in egg mixture to form a soft dough. Turn out dough onto a floured board. Knead several times just until well mixed. Shape 8-10 slightly flattened rounds. Bake in 375 degree oven for about 20 minutes or until browned. Makes 8-10 scones. NOTE: These are even more flavorful the next day.


Southern Raised Biscuits

Ingredients

This is a great biscuit recipe. I'm not sure where I got it, but I've used it for years. It is very rich, tender and flaky!

3-1/2 C Unsifted flour

2 Tbl Baking powder

1/4 tsp Salt

1 Tbl Sugar

1 C Butter flavored shortening

1/3 C Warm water

1 Pkg Dry yeast

3/4 C Milk - at room temerature

In a medium bowl, combine 3 cups flour and dry ingredients (except yeast). Cut in shortening to rememble course crumbs. Soften yeast in warm water. Stir in milk and yeast mixture with hands. Sprinkle a board with remaining 1/2 cup flour. Turn out dough on board and knead a couple of times. Pat out to 1/2" thick. With a large knife, cut dough into 9-12 squares. Place 1-inch apart on greased baking sheet. Prick tops with fork. Set aside in warm place for 20 minutes. Heat oven to 400 degrees. Bake until golden brown (8-12) minutes - cool slightly, and brush tops with melted butter if desired.


Orange Cinnamon Sticks

Ingredients

Great for breakfast or brunch. Easy Makes 8 sticks

1 (11 ounce) can refrigerated soft breadstick dough

2 Tbl butter or margarine, melted

1 Tbl honey

1 tsp orange juice

1 tsp minced orange rind

2 Tbl white sugar

1/2 tsp ground cinnamon

Unroll the dough. Separate into strips. Twist each strip on a flat surface. Place 1 inch apart on a large ungreased cookie sheet. In a small bowl, combine margarine or butter, honey, orange juice, and orange rind. Mix well. Brush this mixture on the breadstick twists. In a small bowl, combine sugar and cinnamon. Sprinkle over the twists. Bake in a preheated 350 degree oven for 15 to 18 minutes, or until golden brown
