Punk Rock Pancakes (Taken From Profane Existence Magazine

2 1/2 Cups Of Unbleached flour
2 Tbsp. of Sugar
2 Tbsp. of Baking Powder
1 Tbsp. of Vegetable Oil
1 tsp. of Salt
2 1/2 Cups of Soy Milk

Mix all of the ingredients into a large bowl. Let them sit for 5-10 minutes to rise. Mix only enough to moisten the batter (over mixing will make them tough), Cook on medium to medium high heat on an oiled pan until golden brown.
Serving Options: Serve with margarine ans maple syrup for standard pancakes.
Tofu Pita Sandwich

1 Pita pocket
5-6 small slices of tofu
Lettuce
Tomato
Mustard

Slice 5-6 small slices of tofu. Add five leaves of lettuce and a slice of a tomato. Insert into the pita pocket. Add mustard or your condiment of your choice. Enjoy.
