| Yeast is a single celled micro-organism that creates the carbonation and the alcohol content in beer. It has two main categories: ale yeast and lager yeast. Ale yeast is top fermenting and rises to the surface during fermentation. Lager yeast is bottom fermenting and ferments much slower. It needs colder temperatures of around 10 C to ferment where as ale yeast ferments at 21 C. | ||||||||
