A Look At The Fermentation Process
Fermentation needs yeast. The yeast has a two part cycle through fermentation. The first phase is called the aerobic phase yeast has oxygen available and turns sugar into carbon dioxide and water. The next phase there is no oxygen (yeast can live without it) it is called the anareobic phase. Now the yeast can only partially convert the sugars. This is the important because this is when the yeast produce the alcohol, sometimes the alcohol concentration get so great that the yeast can no longer live, and dies of alcohol poisoning.
