In India a lot of people eat rice daily. In every next house rice is cooked for lunch mostly. There are many recipes that can be cooked using rice, one of them is 'Vegetabe pulao'.
It is an easy and spicy dish. we need some vegetables and rice for it and can cook easily in pressure cooker as we cook plain rice. 
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Serves: 2 servings
Ingredients:
 Basmati Rice - 1/2 cup
     Onion - 1 medium size (finely chopped)
  Tomato - 1 (finely chopped)
 fresh Green Peas - 1/4 cup
Carrot - 1/4 cup (finely chopped)
French Beans - 3 tbs
Bay leaf - 1
Cinnamon - piece of 1 inch
Cloves - 2
Ghee - 1 tbs
oil - 2 tbs
 Water - 1 cup
Garam Masala Powder - 1/4 teaspoon
Turmeric Powder - 1/8 teaspoon
Red Chilli Powder - 1/2 teaspoon
Salt - as per taste
Coriander Leaves - 2 tbs (finely chopped)
 
Method:
First wash rice and soak it in water and leave it for 15-20 minutes. after that drain out the water and keep the rice aside. Now heat oil and ghee in pressure cooker on low flame. Add bay leaf, cinnamon, clove, and sauté for 30 seconds, then add finely chopped onion and sauté for almost 2 min until it turns light brown.
now we add chopped tomato, green peas, beans and carrot; stir fry them for 2-3 min. add soaked rice, garam masala powder, turmeric powder, red chilli powder and salt. stir fry them for 2-3 min.
add water and mix it well with a ladle. close the lid of cooker and cook it for 2 whistles over medium flame. after the 1st whistle reduce the flame to low and cook until the 2nd whistle and then turn off the flame.
Let it cool until the pressure inside the cooker comes down naturally. Open the lid carefully and fluff the rice with ladel. Transfer it to a serving bowl and garnish with fresh coriander leaves.
It is served and enjoyed with cucumber raita, papad and pickle.
Tips: if you want to prepare for a large quantity then use a large pressure cooker. Just use rice and water in 1:2 ratios (for every one cup rice two cups water should be added.)
