Junkie Potatoes
Ok these are seriously fucking easy. Look on my recipies page for a more elaborate potato recipe later, but if you are in sort of a hurry these are good. I came up with these when I was loaded (during beer battle 3, actually). So if I can make them drunk, you sure as hell can sober.


Ok for these you'll need the following ingredients and what not.

Ok, what you do with all this crap:

First wash your potatoes and put them on the plate. Stick them in the microwave and nuke them on high for about 6 to 8 minutes. BUT do it at 2 minute intervals. Microwave for 2 minutes then rearrange them and turn them over and go for 2 more minutes etc.,. If you have a microwave that spins the food while it cooks it this wont be so tedious but you still might need to stop it and turn them over halfway through.

You will know when the potatoes are done when they are soft and pretty much exactly like they have been baked. Essentially we are starting with baked potatoes here. Its just faster and easier in the microwave.

Once the potatoes are cooked how we want them, slice them. This should be incredibly easy if they are done right. They will cut right apart the only thing is they will be HOT so be careful. First slice thinly crossways, like fried potatoes. Once they are all in slices cut the slices in half and keep dicing until they are all mostly in small chunks and the skin is well cut up and distributed througout.

Now you should have a plate full of well cut up, basically baked, potato. Heat up your frying pan to High. Melt the butter in the bottom until its all liquid and bubbling and steaming and, most imporantly, covers the whole bottom of the pan. Now heres where you make a decision about how you want them to taste. You have several options. You can add all 3 sauces or just a couple. I recommend definitely adding the Tabasco and then 1 of the black sauces, either the Worcestershire or the Soy Sauce. If you prefer it saltier then obviously use the Soy. A few good hard shakes from each bottle should do it. When it hits the melted butter it should steam up nice and good. Try not to sniff the steam; Tabasco up your nose is not fun. Roll the sauces and the butter around in the pan til they are nice and mixed. Turn the heat down to about Medium or Medium/High. Now slide the potatoes off of the plate into the pan. Immediately take your fork and mix them around to get evenly covered in the sauce. Since your potatoes are essentially baked they should absorb most of the sauce right away. Once it is all stirred in well, let them cook for a minute or two.

Now sprinkle the Garlic salt and Pepper over them and stir them again. Basically you should stir them often and keep them from sticking to the pan. When they start to get fried and sort of hashbrowned on the bottom try to flip them over so they become this way throughout. At this point you can add a tiny bit more of one of the black sauce(s) (Soy or Worcestershire or both, whichever you used) to any spots that don't look like they absorbed any sauce. Now just keep cooking and stirring at a medium heat until they are uniformly browned and crispy in places.

The End: Once they are well browned all over and steaming hot, crack your egg (or 2 if you have a lot of potatoes) over top of them and stir it in. The heat from the potatoes should fry the egg almost immediately so make sure you stir it well to get it well distributed througout the potatoes. Once the egg is completely stirred in and cooked (your potatoes should suddenly be slightly lighter color and somewhat more dry looking) it is ready to serve. Enjoy, Junkie.
