Spanish Potato Salade
Ingredients:
1 kilo potatoes( 2.2 pounds), firm cooking ones
2 parts of a garlic
2 tbsp. Mayonnaise
150 grams (0.33 pounds). Greek Yoghourt
black pepper, salt
2 spring onions, sliced in rings - or 2 small onions
3 grilled peppers, sliced (you can buy these already grilled in the store)
2 tbsp. Fresh basil, finely chopped
2 tbsp. Parsley, finely chopped
Directions:
Peel the potatoes, dice them and cook them for about 8 minutes.
Take a dish and put the garlic, mayonnaise, youghurt and salt and
pepper and
stir them into a dressing.
Put the warm potato cubes, onion rings, pepper rings en fresh herbs in
the
dressing and let it cool off.
What you can also do, is buy regular yoghurt and pour
it in a teatowel which you can hang on a hook with a bowl underneath,
so thewater can leak out of the yoghurt. This can take a few hours but then
you have delicious thick yoghurt!!
