MICROWAVE VANILLA PUDDING



Ingredients:
1/4 CUP CREAM CORN STARCH
1/3 CUP SUGAR
2 CUPS MILK
2 EGSS,SLIGHTLY BEATEN
2 TBLESP. BUTTER OR MARGARINE
1 TSP. VANILLA

PREPARATION
IN MEDIUM SIZE GLASS BOWL, COMBINE
CREAM CORN STARCH AND SUGAR. WITH
WHISK, GRADUALLY STIR MILK INTO
CORN STARCH MIXTURE.
COOK IN MICROWAVE ON HIGH POWER
FOR 5-7 MINUTES OR UNTIL THICKENED
AND BUBBLING, STIRRING AFTER
EACH 2 MINUTE INTERVAL. BEAT HALF
OF THE HOT MIXTURE INTO THE EGGS.
BLEND THE ABOVE EGG MIXTURE INTO
REMAINING HOT MIXTURE.
MICROWAVE ON HIGH POWER FOR
1-1/2 TO 2-1/2 MINUTES OR UNTIL
THICKENED AND HEATED THROUGH; STIRRING
AFTER EACH 45 SECONDS OF COOKING.
WITH WHISK, STIR IN BUTTER AND VANILLA.
POUR INTO DESERT DISHES. COVER AND
REFRIGERATE UNTIL CHILLED.
