General:
I never thought there was a shortcut on this stage, but there is. I think it was discovered independently by a couple of people, I saw it first on a vid by FerretDruid. Sdkess said he discoverd the shortcut by accident, which is rather funny if you ask me. It was nice to play it without the shortcut though, my best score for that was 11186 (Packattack had 11192), try beating those for fun.

I want a consistent finish!
Hold forward at the beginning and move past the first 3 bumpers to your left and right. Slow down, and the next 2 bumpers should move apart very nicely for you to pass. Go by, slow down again, and the next set of 2 bumpers will give way. The next 2 bumpers, the ones left and right, are irrelevant, they don�t block your path. For the last 3 bumpers, go very slowly. With a bit of practice, you will have no problems.

I want a good score!
Do the shortcut, and chances are you�ll get over 11400 with ease.

I want the record!
Boost left, then go right to evade the bumper, then left again. Note the "hole" (it�s not a hole, just the right side of the path missing) after the 3rd bumper. You want to hit the back edge of it, almost exactly at the upper left (north-west) corner. You want to bounce as low as possible without hitting the bumper after it. Now there is a choice to make. After the next 2 bumpers, there are small gaps left and right, both only 2 by 2 tiles big. The idea is to hit the back edge of this gap and jump over all remaining bumpers. The WR uses the right gap, I usually use the left one, I doubt it makes a big difference. Anyway, depending on which gap you go for, go left or right after the jump. Ideally, you�ll land, bounce slightly up, and when landing from that bounce, hit the back corner of the gap. Fly over all bumpers, land before the goal and hop in in less than 3 seconds!

As a note on the WR: The lower you go over all the bumpers, the faster you are. The lower you are, the easier it will be to hit the bumper after the small gap. To prevent getting hit by that bumper, you need to try to go as far to the side as possible, and then back in mid-air. Also, most people (well at least I) think it�s possible to get some fluke bumper bounces including at least 1 banana, which would instantly beat the record. Nobody has done this yet, so you might want to be the first. :)
