| Sweet Pepper Pasta Marinera |

1/4 cup black olives, sliced |

2 cups sliced sweet peppers, red, green, and yellow if cost isn't an issue |

1 medium onion, sliced |

2 tbl. olive oil |
 |
|
1/4 tsp. Italian seasoning |
 |
|
1/4 cup sun dried tomatoes |
Place the sun dried tomatoes in a bowl and pour boiling water over them, letting them soak for about 15 min. or until soft. Clean and slice the peppers into strips. Slice the onion. Slice the olives in half. Once the sun dried tomatoes are soft, drain and slice. Place all the veggies in a bowl. Coat the vegetables in Italian Seasoning and Olive oil.
When the sauce is done and the pasta is cooked, place the veggies in a large non stick skillet and sauté until al dente.
Marinera Sauce

2 cups of tomato herb and garlic pasta sauce (or whatever tomato based pasta sauce you may have) |

1 1/2 tbl. Italian seasoning |
 |
|
2 tbl. cooking wine |
 |
|
1 tsp. thyme |
 |
|
1 tsp.- 1 tbl. minced garlic (how much garlic you add will depend on your taste for garlic) |
Place all of the ingredients in a large pot and simmer on medium low for about 2 hours, you want the flavors to blend.
Serve with linguine, 3 cups cooked.
Cook the pasta, drain. Place pasta on a plate, spoon sauce over linguine and then spoon sautéed vegetables on top.
