Moves:

Give him mostly technical moves, with the STF as his finisher, Bow and Arrow Lock and Deathlock with Bridge as ground holds, some sort of neckbreaker as his favorite (unfortunately his own neckbreaker doesn't seem to be in the game), and a lot of suplexes, arm drags and arm bar holds for ready moves.

Give him full points for technical attack and his STF will be deadly!
