Mathilde's Vegetable Soup
2 quarts water
5 vegetable boullion cubes
1 tablespoon salt
Freshly ground pepper
2 stalks celery, chopped
1 large onion, chopped
2 (14-ounce) cans diced tomatoes
1 (10-ounce) package frozen cut okra
2 (10-ounce) packages frozen mixed vegetables
1 can pinto beans
1 medium potato, diced
1/2 green pepper, diced
1 pound mushrooms, sliced
2 cups tomato juice
cayenne pepper to taste
In a large covered cooking pot, combine water, boullion cubes, salt, pepper and all vegetables and cayenne. Cook together until vegetables are tender. Cool. Freeze.
To serve: Thaw. Heat in a pot til hot.
Serves 8.

My Notes: I have found vegetable boullion cubes hard to find, so I just use chicken boullion cubes.
