Last Minute Pizza Crust
This pizza/calzone dough recipe I clipped from a newspaper years and years ago. It is tasty, cheap and can be made up and ready to go in less than 20 minutes, including the rising time. One recipe is enough for half the calzone filling, or for one large pizza.
3 cups or so all-purpose flour
1 package rapid rising yeast
3/4 teaspoon salt
1 cup very warm water
2 tablespoons olive oil
In a large bowl, combine 2 cups flour, yeast, and salt. Add the water and oil. Stir enough remaining flour to make a soft dough. Knead dough on a lightly floured board until smooth and elastic, 4 to 6 minutes. Cover, let rest 10 minutes.
Cover (as a pizza) or fill (as a calzone), bake at 400 degrees for 20 to 25 minutes.
