Circle Marmalade

So named because it has four representative elements, like the magical circle. This marmalade is to encourage fellowship and understanding in groups. Earth is quince and allspice, air is tangarine and almond, fire is pineapple and ginger, and water is pear and vanilla.

Rind from 3 tangarines---1 cup drained crushed pineapple---7 cups water

7 cups sugar---3 tangerines peeled,seeded and chopped---1/2tsp almond extract

2 quinces,finely chopped---1/2tsp allspice---1/2tsp ginger

2 pears, peeled and finely chopped---1/2 tsp vanilla

Slice the tangerine rind into very thin, short strips. Bring the rind and the water to a boil. Simmer for 2 hours. Mix in tangerines,quinces, pears,pineapple,sugar, extract, allspice,ginger,and vanilla. Cook over a low flame until the sugar dissolves. Increase heat; boil until the set point is reached about, 45-60 mins. Skim off any foam that appears.

Fill jars; leave 1/2 inch headspace. Process in a boiling water bath for 15 minutes.

Yield: About 8 half pints
