RECIPES
These recipes are what my grandmother calls her
"Russian Recipes" -- which were handed down to her by
her mother, Olena Chowka Cosack.
Haluska
1 large onion
1 small head of cabbage (shread and boil off)
Dumplings: 2 cups flour
2 eggs
salt to taste
enough liquid (so they are not runny but will hold shape in
boiling water).
Make dumplings.
Drain.
In skillet, saute onion.
Add cabbage (already boiled and shredded) and dumplings and stir
together.
Fried Bread
Make basic bread dough (or buy frozen bread dough).
Take a pice about 1 tablespoon size and fry in hot oil.
Sprinkle white or brown sugar over.
Matsanka
4 eggs
1 TBSP flour
1/3 cup chopped cheese
About 1 cup milk.
Butter.
In frying pan melt butter.
Pour mixture in and stir so that it does not stick.
Good over toast.
Cabbage Rolls
1 lb ground beef
1/2 lb sausage
2 eggs
Salt
Pepper
1/2 cup rice
Head of cabbage
Tomato sauce
Mix ground beef, sausage, eggs, salt and pepper.
Cook rice and add to above.
Mix well.
Get a nice head of cabbage.
Cut bottom out of cabbage (because in boiling water it will
loosen leaves better) and boil until soft.
Peel leaves off one at a time until you have enough for all
rolls.
Put meat mixture into each leaf and wrap around meat.
Put into pan and pour tomato sauce over.
Put a few extra cabbage leaves on top so it won't burn.
Bake at 350 degrees for about 1 hour.
Noodles and Cheese
Noodles
1 container cottage cheese (small curd)
1 large onion
Bake as many noodles as you want.
Chop and saute onion.
Put cooked noodles in and stir.
Then add cottage cheese and stir.
