This page is an experiment in gas firing a masonry oven, I have gotten tiried of sweeping the hot ash and embers from the stove. Not only is it more time consuming, but in the process you become covered with the fine ash like an acid rain. I have come up with this method of firing the oven and it works very well. The cost for the gas is only a little more than the wood, ( on Long Island we must buy firewood ). Anyone interested can email me and I will let them know of my experience with this.
The bread bakes the same, as the benefit of masonry oven come from the masonry itself. Let me know what you think and if anyone out there fires this also.
