Porcupine Balls
1 pound ground turkey meat
1 cup cooked rice
1/2 onion (chopped)
2 egg whites or 1/4 cup egg substitute
1/2 teaspoon sweet basil flakes
pinch of garlic powder
salt and pepper to taste
2 tablespoons flour
1 cup water
1 teaspoon or 2 cubes of chicken bullion (optional)
Mix turkey, rice, onion, egg whites, salt and pepper, sweet basil flakes,
pinch of garlic in a bowl. (I do it by hand)
Form mixture into meatballs. Spray skillet with non-stick spray.
Brown meatballs on all sides in skillet. Remove from skillet
Mix flour and cold water together and pour into skillet
Stir until sauce appears. Salt and pepper to taste and add
chicken bullion (optional)
Place meatballs in skillet and simmer in sauce for approximately 5 to 10 minutes. Serves 4-6.
I serve my sauce over cooked noodles.
