Pasta Salad


1 cup uncooked elbow macaroni

1 can red kidney beans drained and rinsed

2 green onions chopped

1/4 red or yellow or orange bell pepper chopped ( not green)

1 small tomato cut into pieces

no fat italian dressing, approximately 4 tablespoons

salt and pepper to taste


Cook macaroni according to package, drain and rinse in cold water. Place macaroni, kidney beans, bell peppers, tomato, onions in bowl. Add salt and pepper and salad dressing. Allow to marinate in refrigerator approsimately 1/2 hour. Serves 4.

If you can not use bottled salad dressings here is a good substitute.

Salad dressing: mix 1 tablespoon lemon juice, 1/4 cup wine vinegar, 1 tablespoons water, salt and pepper to taste and add a sprinkle of dried sweet basil. Refrigerate dressing before using.
