Meatless Vegetable Soup


1 can consomme soup or 1 can vegetable broth

1 can pinto beans ( drained and rinsed)

2 carrots (diced)

2 celery stalks (diced)

1/2 yellow onion (diced)

1 zucchini (diced)

1/8 cup long grain rice

1/8 cup converted brown rice

1 stalk bok choy or 1/4 cup cabbage (chopped)

3 cup water

pinch dried sweet basil flakes

salt and pepper to taste


Pour consomme or broth in large pot. Add remaining ingredients. Allow to simmer 30 minutes. Serve. This soup sounds too simple, but it is good.
