Turkey Enchilada Casserole
1 pound ground turkey meat
1/2 onion (chopped)
1 package enchillada sauce mix
1 6oz. can tomato paste
4 corn tortilla
8 oz. no-fat chedder cheese(shredded)
salt and pepper
Prepare enchillada sauce mix as directed. Brown onion and ground turkey meat together in skillet, add salt and pepper to taste. Cut corn tortillas into small pieces Spray 1 1/2 quart casserole with non-stick spray. Cover bottom of casserole with layer of sauce. Add a layer of tortillas over sauce. Place layer of meat and onion mixture on tortillas add layer of cheese and layer sauce. Repeat layers with tortillas the last layer. Top with remaining cheeseBake in 350 oven 20 minutes. Serves 6.
This is a tasty and low-fat casserole. I serve it with spanish rice and no-fat refried beans.
