Meatless Chili
2 cloves garlic (minced)
1 can beans with chili sauce
1 1/2 cup cooked brown rice
1/2 yellow onion (diced)
1 can chopped tomatoes (14 1/2 oz.)
1 teas. chili powder
1/2 teas. cummin
salt and pepper to taste
Saute garlic and onion in pot coated with non-stick spray.
Add chopped tomatoes, beans and simmer for 3 minutes. Add chili
powder, cumin, salt and pepper. Add cooked brown rice. Mix well in pot so flavors blend. Let simmer for about 5 minutes. Serve as main dish.
