Mudbug is just another name for the tasty little crustacean also known as crawfish, crayfish or crawdad. Though now eaten just about everywhere, Louisiana has long been the state with greatest interest in catching, commercially raising, and eating crawfish, which is now the state crustacean. Some examples of ways to eat crawfish include: boiled, fried, crawfish pie, etouffee, jambalaya and bisque. The mudbug can be found in almost any fresh water bayou or lake, but this mudbug microbox can only be found in Sam Houston Jones SP. The park is located just north of the most productive birding region of Louisiana, and the three hiking trails winding along the Calcasieu River make strolling or serious hiking pleasurable.
