fig and anise
bread

bake at 375°F for 40-45min

Ingredients:

1 cup chopped dried figs
1 tbs anise-flavoured liqueur

1½ cups all purpose flour
1½ cups whole wheat flour
½ cup quick oats
1 tbs anise seeds
1 tsp baking soda
1 tsp salt

1½ cups buttermilk (1.5%mf)
1 egg beaten

Directions:

Soak figs in liqueur for 15 mins.

combine flours, oats, anise seeds, baking soda + salt in large bowl. make a well and pour in buttermilk, egg and fig mixture and stir quickly just until dry ingredients are moistened.

use hands near end of mixing and bring dough together to form a loose ball. turn dough out onto floured surface and knead gently about 10 mins or until smooth.

shape into a 7in round and place on a lightly greased baking sheet. with a sharp knife slash top with an 'x' about 1/2in deep.

bake at 375°F for 40-45mins - or until bread is brawn and sounds hollow when tapped on the bottom.
