| Hamburger Crunch 1 lb. ground beef 1 medium onion, chopped 1 (10 1/2oz.)can condensed cream of mushroom soup (undiluted) 1 (10 1/2oz.) can of condensed cream of chicken soup (undiluted) 2 soup cans of water 1/2 cup of uncooked regular white rice 4 Tbls. soy sauce Pepper(to taste) 1 (3oz.) can of chow mein noodles Start heating at 400 degrees. In skillet saute ground beef until it loses its red color;add chopped onion. Cook 5 minutes. In greased 2 1/2 or 3 quart casserole, combine hamburger mixture with soups, water,rice,soy sauce,and pepper. Bake, uncovered, 50 minutes. Sprinkle chow mein noodles over hamburger; bake 10 minutes longer. Remove from oven; let stand 10 minutes before serving. makes 6 servings. |
| Salt and Pepper Steak 1 1/2 pounds of sirloin steak 1/2 cup oil 1 onion (chopped) 1 green bell pepper(chopped) 1 teaspoon salt 1 teaspoon pepper 3 tbls. all-purpose flour 1 cup water 3 tbls.soy sauce Cooked rice Cut the steak into very thin slices, In a skillit with a lid heat the oil and add the steak slices. Cook uncovered until browned. Pour out some of the oil and add the remaining ingredients except the rice. Cover and cook for 30 to 35 minutes; until the juice has thickened. Serve over rice. Serves 4 to 6. |
| Red Beans and Rice 2 cups red beans 1 onion (chopped) 2 cloves garlic 2 tsp. seasoning salt Bay leaf Pinch of sugar Red pepper to taste Smoked sausge cooked rice Wash beans, soak over night and drain. Cover beans and all ingredients (except the smoked sausage) with cold water. Bring to boil,reduce heat and simmer until done. Add smoked sausage and cook the last 30 minutes Serve over rice. |
| Old-Fashion Beef Stew 1/2 cup all purpose flour 1 teaspoon salt 1 teaspoon pepper 2 pounds beef stew meat, cut into 1 inch pieces 2 tablespoons shortening 6 cups hot water 3 peeled-medium potatoes, cut into 1 inch cubes 4 carrots cut into 1 inch slices ! green pepper, cut up 1 medium onion, diced up 1 tablespoon salt 2 beef bouillon cubes Mix flour, teaspoon salt and pepper. Coat meat with flour mixture. Melt shortning in large skillet; brown meat throughly. Add water; heat to boiling. Reduce heat; cover and simmer 2 hours. Stir in remaining ingredients. Simmer 30 minutes or until vegetables are tender. If desired, thicken stew. mix 1 cup cold water and 2 to 4 tablespoons flour until blended. Stir into stew; heat to boiling, stiring constantly. Boil and stir 1 minute. 6 servings. |
| Chilli Con Carne 1 lb.of ground beef 1/3 cup flour 1 teaspoon salt 3 1/4 tablespoons chilli powder 1-15oz.can of tomatoes 3 cups water 1 onoin, cut up 15 oz. can pinto beans Brown the ground beef and drain off grease,add flour and coat the meat,then add salt and chilli powder. Pour tomatoes and water over the meat mixture and bring to a boil, add onion and beans. Simmer about 20 minutes. Makes about 4 servings. |
