
4 yams or sweet potatoes 1 cup orange juice 1 1/2 Tbsp. cornstarch 1/4 cup pure maple syrup 1 tsp. grated orange rind 1/2 t. grated lemon rind salt to taste Cook yams, peel and slice into a baking dish. Combine half of the orange juice with cornstarch and stir to dissolve starch. Add remaining orange juice and other ingredients and bring to a boil, stirring constantly. Simmer until thick and clear.
