
Ingredients: 1 Pkg lrg or 2 pkgs small, soft flour tortillas 1 lb grated sharp cheddar cheese 1 lb grated Monterey Jack cheese 3 lbs of boneless meat (chicken or tender steak strips) 2 red bell peppers 1 green bell pepper 1 large cooking onion 1 pkg Fajita seasoning mix (No Frills has it) 1 Tsp chili powder (not chili pepper powder) 3 shakes Tabasco sauce (optional) 1 Tsp Garlic powder 2 Tbls Olive Oil 2 shakes black pepper Directions: In a deep skillet with the olive oil, add meat, all the spices and Tabasco sauce and stir fry until almost done then add thinly sliced peppers and onion continuing to cook until peppers and onions are soft. On a large cookie sheet place soft tortillas and place a thin layer of each cheese, spread meat mixture on then another thin layer of each cheese. Top with another tortilla, then bake on 325 degrees celcius about 10 mins or until they crisp a little on edges. Slice into half or sections. Serve with Salsa And Sour Cream. ENJOY!!! |
