
Pumpkin Muffins
Ingredients
11/2 cup all purpose flour
� cup sugar
� tsp salt
2 tsp baking soda
� tsp cinnamon
� tsp nutmeg
� cup butter
� cup milk
� canned pumpkin puree
1 large egg
Directions
* Sift together first six ingredients. Add butter and combine till flaky texture.
* In a small bowl, combine milk, pumpkin and beaten egg.
* Fold two mixtures together just till moist. Do not over mix, or it will get doughy.
* Spoon into greased muffin tins 2/3rds full. Bake at 350 � 375 degrees for 18 � 20 minutes. Cool and serve.
