Potato Casserole

Ingredients

2 C (500ml) Shredded Potatoes
1/2 C (125g) Butter or Margarine, melted
2 Eggs, beaten
1 T Onion, finely chopped
to taste Salt
to taste Black Pepper
1/4 tsp Paprika
1/2 C (60ml) Milk
1/2 C (60ml) Shredded Sharp Cheddar cheese
(white sharp is nice in this recipe)

Preheat oven to 350F (180C).

Grease a large casserole (1.5 quart) dish.

In a medium bowl, combine the potatoes, butter, eggs,
onion, salt, pepper and paprika.

Place potato mixture into the prepared baking dish and
pour milk over top.

Bake for 40 minutes.

Sprinkle top with cheese, return to oven and bake until cheese
melts and the casserole is slightly browned.
