
DOUGH 4 cups flour 2 tsp salt 2 tbls of vegtable oil 2 eggs-well beaten 1 cup water or 1/2 & 1/2 water, milk FILLING 2 cups mashed potatos 2 tbls veg oil You may now add your favorite toppings like cheese, bacon, onions etc.. Combine flour and salt in a deep bowl, then add remaining ingredients, mix well until dough is smooth and elastic. Cover and let sit 15 mins or more. Roll dough thin on a floured surface. Cut rounds with cookie cutter or a glass. Put round piece in palm of hand, and place a spoonful of filling on dough and pince edges firmly together. The edges should be free of filling and well sealed to prevent topping from coming out during cooking. Place perogy's on a floured counter or tea towel not crowding them. Cover with another towel to prevent drying. To cook, drop in a few at a time into a large pot of boiling water. Stir with wooden spoon to prevent sticking. Boil 4-5 mins or until fluffy and floating, then remove from water with slotted spoon colander and rinse under hot tap water. Drain well. Place in bowl and cover with onions sauteed in butter. Serve Hot. |
