
Ingredients: 2 tablespoons cornstarch 1 3/4 cups chicken broth 2 tablespoons soy sauce 1 pound boneless, skinless chicken breast -- cut up 2 cloves garlic -- minced 1 cup broccoli florets 1 cup red and green bell pepper -- cut in strips 1 cup sliced onions 1/2 cup orange marmalade 4 cups hot cooked rice Combine cornstarch, broth, and soy sauce; mix well. Spray nonstick skillet with cooking spray and heat 1 minute. Add chicken and cook until browned, stirring often. Add garlic and vegetables and stir-fry 5 minutes. Add cornstarch mixture and marmalade. Cook until mixture boils and thickens, stirring. Serve over hot cooked rice. Yield: 4 servings. |
