FRENCH FRIED POTATO PUFFS

Cooking oil
2 cups seasoned mashed potatoes
3 eggs, well beaten
4 slices crumbled, crisp bacon
1 cup sifted flour
2 TBsp. baking powder

Put oil in skillet, heat till very hot. Add enough oil to make 1 1/2 to 2
inches deep (may use deep-fryer).
Combine potatoes, eggs, and bacon. Sift together flour and baking powder.
Stir into potato mixture and blend well.
Drop by spoonful into hot oil. Fry for 3 to 5 minutes or until brown.
Drain.
Makes enough for 6 servings.
