Fish in Orange Sauce

Fish with lemon is a classic, but this ginger-infused
orange sauce is easy and elegant with broiled fish.

Serves: 4


Ingredients:
1/2 teaspoon olive oil
6 slices fresh ginger, about the size of a quarter
6 green onions, chopped
2 cloves garlic, smashed and chopped
1 cup orange juice
1 teaspoon cornstarch dissolved in 2 tablespoons water
4 4-ounce portions broiled fish, any variety
1 tablespoon cilantro, chopped

Preparation:
In small saucepan, heat olive oil over medium heat.

Add ginger, onions and garlic to oil and saute for about
one minute until fragrant. Do not brown.

Add orange juice and simmer for 5 minutes.

Strain liquid and add back to saucepan. Whisk in cornstarch
and boil for 30 seconds until slightly thickened.

Pour over broiled fish and dust with fresh cilantro.
