DEVILISH HAM BISCUITS

3 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon cayenne pepper
1-1/2 Tablespoons baking powder
1/2 teaspoon baking soda
1/3 cup shortening
1/2 cup shredded sharp Cheddar cheese
3/4 cup ground baked ham
1-1/4 to 1-1/2 cups buttermilk

Preheat oven to 400 degrees. Sift flour with salt,
dry mustard, cayenne pepper, baking powder and
baking soda. Cut in shortening until very coarse
and crumbly. Do not overmix. Add cheese and
ground ham; toss with a fork to mix well. Slowly
add buttermilk and continue to toss with the fork
until a soft dough forms. Turn onto a lightly floured
surface and knead several times just until smooth
and springy. Roll to 3/4-inch thickness and cut into
2-inch rounds. Arrange about 2 inches apart on
lightly greased baking sheet. Bake in 400-degree
oven for about 15 minutes, or until golden.

Makes about 2 dozen biscuits.
