Chicken Fried Rice

2 boneless skinless Chicken Breasts
1/2 tsp garlic powder ( or 1 clove thinly sliced)
2 cups instant rice
1 3/4 - 2 cups water (use smaller amt with liquid bovril. keep liquid even with rice)
dash salt
2 shakes soya sauce
1/4 cup Chicken bovril or oxo ( 2 cubes or 3 envelopes )
1 small onion diced
3 or 4 stalks celery sliced
1 tbls olive oil
3 tbls butter

Directions

In a med sauce pan bring to a boil : water, salt, 1 tbls butter, bovril
and soya sauce. Remove from heat then add rice and cover. Allow to stand
while you prepare chicken. Do not remove cover till you are ready to use.
In a large deep skillet add olive oil, garlic, cubed chicken pieces
cook on med till Chicken is done. Add diced onion and celery stir
fry till onion softens. Remove from pan leaving any fat in pan. Melt
remaining butter in pan, then add rice. Stir fry on high about five mins
then return Chicken to pan and fry about 5 more mins.
