
Preparation Time: about 15 minutes Cooking Time: about 1 hour Serves: 6 or 4 Ingredients: 6 Pork Chops (1 1/2 inch thick) 1/4 C (60ml) Chopped Onion (use more if you like) 1/4 C (60ml) Butter or Margarine 3 C (725ml) Bread Crumbs 2 C (500ml) Finely Chopped Granny Smith Apples (tart apples like Granny Smith are best) 2 ribs Celery, finely chopped 2 tsp Fresh Chopped Parsley 2 tsp Fresh Chopped Oregano to taste Salt to taste Pepper 1 T Vegetable Oil or Non-Stick Spray Preheat oven to 350F (180C). In a large skillet saute onion in butter or margarine until soft. Remove from heat to a bowl. Add the bread crumbs, apples, celery, parsley, oregano and salt and pepper to taste. Mix well. In skillet, heat oil to medium high or use non-stick spray and brown chops lightly on both sides. Cut a large pocket in the side of each pork chop; season inside and out with salt and pepper as you like. Spoon apple mixture loosely into pockets. Place browned chops in an ungreased 9x13 inch (23x30cm) casserole dish. Cover with foil and bake for 30 minutes. Remove cover and bake for 30 minutes longer or until juices run clear. |
