
1/2 cup all-purpose flour 1 teaspoon salt 1/4 teaspoon black pepper 8 boneless, skinless chicken breast halves 1/4 cup butter or margarine 1/2 cup apple brandy -- or apple juice 2 tablespoons lemon juice 1 tablespoon honey 20 ounces canned sliced apples -- undrained Combine flour, salt, and pepper in a plastic or paper bag; shake to mix. Place 2 or 3 pieces of chicken in bag; shake well. Repeat procedure with remaining chicken pieces. Melt butter in a large skillet over medium heat; add chicken, and cook 5 to 8 minutes on each side or until golden brown. Combine brandy, lemon juice, and honey; mix well, and pour over chicken. Turn chicken to coat; add sliced apples. Cover, reduce heat, and simmer for 20 minutes. Transfer chicken and apples to serving platter; drizzle pan drippings over top. Yield: 8 servings. |
