Jean's Spinach Balls
This recipe comes from my friend Jean Meka
Ingredients
- 6 eggs
- 2�� 10 oz. packages frozen spinach� drained and squeezed dry
- 2 cups herb stuffing mix� (I used pepperidge farm)
- 1 large onion grated
- 1 cup parmasan cheese
- 3/4 cup butter
- 1 tsp. poultry seasoning� (optional)
- salt and pepper to taste

Instructions
Preheat oven to 350 degrees
Beat eggs in large bowl.� Add remaining ingredients and blend well.� Form into walnut size balls.�
Put on greased cookie sheet.�
Bake about 20 minutes till golden.
Serve with prepared horseradish/mayonaisse sauce mixed with honey mustard for dipping.
[I thought the horseradish dip was a bit strong, I go with my favorite Honey-Mustard-Curry dip. -Zahdé]
