Coq Au Vin (Chicken Braised in Wine)

Ingredients

Instructions

  1. Using a large heavy pot brown the chicken pieces in oil.
  2. Add the onion, carrot, and garlic and brown lightly.
  3. Add the spices and wine and simmer covered on low heat for abut 1 hour.
  4. For the last 5 minutes add the mushrooms.
  5. Serve with rice.
