Houston we have a problem. Last weekend we bottled up last years Merlot, and moved this year's Merlot into the oak barrel. We, of course, had to do some sampling (quality control purposes only) and it turns out this year's Merlot is still sweet! Uh, oh. What do we do now Batman? It's been about a month since we pressed it, so it should be completely dry by now. Dessert wine anyone? I dug out a space heater and have been heating the garage since Saturday in hopes that invigorate any remaining yeasties to get to work. I did notice some bubles coming out of the airlock this morning, so I hope it's working. More to come.
