Green Rice
(for two)
- � cup thinly sliced green onions with tops
- 2 T. butter
- 1-� cups chicken broth
- 2/3 cup uncooked long grain rice
- � cup finely chopped green pepper
- � cup minced fresh parsley or 4 tsp. dried parsley
flakes
- Dash pepper
- � cup shredded cheddar cheese, opt.
- In a skillet, saute oniions in butter until tender. Stir
in the broth, rice, green pepper, parsley and pepper; bring to a boil.
- Remove from heat; pour into a greased 1-qt. baking dish.
Cover and bake at 350� for 25 minutes or until rice is tender.
- Top with cheese if desired; bake 3 minutes longer or
until cheese melts.
- Yield: 2-3 servings.
