Tahitian Coffee
* 2 3/4 cups hot strong brewed coffee
* 1/4 cup dark rum
* 1 tablespoon sugar
* 1/2 cup vanilla low-fat ice cream
* 4 (3-inch) cinnamon sticks (optional)
Combine the first 3 ingredients in a pitcher, stirring until sugar dissolves. Pour into mugs, and top with ice cream. Garnish with cinnamon sticks, if desired.
NOTES:
Melted ice cream forms a sweet, foamy top layer for this drink.
