Stephanie McMahon-Helmsley's Waldorf Salad
4 medium apples, cored and diced
1 tablespoon plus 1 teaspoon fresh lemon juice
1/2 cup chopped celery
1/2 cup halved seedless green grapes
1/2 cup chopped walnuts (or slivered almonds)
1/4 cup raisins
1/2 cup mayonnaise or salad dressing
1 tablespoon sugar
1/2 cup whipping cream
freshly ground nutmeg to taste

1 add the apples to a large bowl, and sprinkle them with 1 tablespoon of the lemon juice.  Add the celery, grapes, walnuts, and raisins.

2 in a small bowl, combine the mayonnaise, sugar, and 1 teaspoon lemon juice

3 in another bowl, whip the cream until soft peaks form, then fold it into the mayonnaise mixture.

4 spoon the mayonnaise mixture over the apple mixture and sprinkle the top lightly with nutmeg.   cover and chill.

makes 8 - 10 servings
